- Methylglyoxal (MG), an endogenous metabolite that increases in diabetes and is a common intermediate in the Maillard glycation reaction. MG reacts with proteins and forms advanced glycation end products (AGEs). MG reacts with residues in proteins and forms numerous adducts,such as argpyrimidine.
